Hearty Veggie Sandwiches

Today was veggie day. With some leftovers of the Artichoke and Chickpea Salad waiting in the fridge, I decided to marry it with my daughter’s favourite sandwich. Check out the recipe at:


This sandwich combines many healthy (if you ignore the mayonnaise) and different flavours – cheddar, red onion, olives, avocado, and Italian salad dressing. Today we used dark whole grain bread.

It’s so easy to put this sandwich together so add whatever veggies or cheese you like.
