Pasta with White Beans and Rapini

I’ve never had it before but had to buy rapini since it looked so green and fresh … and was on sale!

This recipe is from Canadian Living Test Kitchen and was published in the Canadian Living Magazine: March 2006.

The introduction states:

“Pasta and beans provide this vegetarian dish with complete protein. It’s also a tasty way to introduce rapini. Also known as broccoli rabe, rapini is related to the cabbage and turnip families and is a source of vitamins A, C and K, as well as potassium. Serve with grated cheese.”

Because we had fusilli as leftovers from the previous day, that’s what I used instead of the whole wheat penne. I also used red kidney beans instead of the romano beans.

My wife and I were surprised at how tasty the rapini was. We expected it to be very bitter.
