Zesty Chicken Thighs

It’s Day 6 in my cycle – chicken. This recipe was excellent. I reduced the quantities by half. We had it with leftover Pasta with White Beans and Rapini.

Zesty Chicken Thighs

Yield                4 servings


12                    boneless, skinless chicken thighs

1 tbsp             olive oil

1 medium       red onion, finely diced

2 tbsp             brown sugar

3/8 cup           ketchup

½ tsp               fresh thyme, chopped

2 tbsp             lemon juice

½ tbsp            Worcestershire sauce

½ tsp               Dijon mustard

1 tsp                Tabasco sauce


Preheat oven to 350 F.

In a saucepan heat oil.

Saute onions until softened and translucent.

Add brown sugar.

Reduce heat to low.

Stir until sugar has dissolved.

Remove from heat.

Stir in remaining ingredients.

Place chicken in oven-proof baking dish.

Cover thighs with the sauce.

Bake uncovered for 35 to 45 minutes.

Serve with brown rice, pasta or couscous.
