Cranberry-walnut oatmeal

The Cranberry-walnut oatmeal recipe by Mayo Clinic staff is excellent with one change. I find the steel-cut oats are more tender if I

  1. toast them in a heavy saucepan,
  2. cover them with water to 2 inches above the oats, then
  3. soak them overnight.
